Parsley is a good source of vitamin A, vitamin C, and vitamin K.  In addition, parsley is a good food source of iron and folic acid. Parsley contains two very important components in its composition that they make this vegetable to has a unique role in human health:

Volatile oils and Flavonoids .

Volatile oils:

The first important component in parsley, are Volatile oils . These oils called essential oils or they are also known as plant essential oils. Important compounds of this group include myristicin, limonene, alpha-thujene, and eugenol. By doping these materials an extract which has extraordinary healing properties obtain. In human studies, it has been found that the volatile oils in parsley especially myristicin prevent the formation of tumors (Particularly lung tumors). In another study, it was found that  stimulates Glutathione S-transferase activity that is responsible for the prevention of cellular damage. Other activities of this oil are to neutralize all kinds of carcinogens such as Benzopyran in the cigarette to smoke and helps smoke from charcoal.
